Pumpkin Bean Burrito Mix
- 1/4 cup vegetable oil
- 2 small onions, chopped
- 2 tsp minced garlic
- 1 red bell pepper, chopped
- 1 jalapeño pepper, seeded, minced
- 1 small chipotle pepper, minced, or 1 tsp chipotle chile powder
- 2 tsp cumin
- 30 oz black beans, rinsed, drained, partially mashed
- 7 oz pink beans or pinto beans, rinsed, drained, partially mashed
- 1 tsp oregano
- 15 oz (about 1 & 1/2 cup) pumpkin purée
- 1/2 tsp (smoked) salt
- 1 handful fresh cilantro, chopped
- Heat oil in a large skillet over medium heat. Add onions and garlic. Sauté until tender.
- Add bell pepper, jalapeño pepper, chipotle chile and cumin. Cook until bell pepper is tender.
- Add beans to skillet and stir in oregano.
- Mix pumpkin purée and salt together in a bowl. Add to skillet and mix.
- Reduce heat and mix in cilantro.
Best served in a burrito or folded tortilla with queso fresco. Top it with some salsa, enchilada salsa, fresh guacamole, or pesto.
