Quinoa Lentil Soup

  1. In a pot, add stock and quinoa. Boil until tender and opened up, (about 10 minutes). Lower heat.
  2. In a pan, add the oil, onions, carrots and celery. Sauté until tender, (about 10-15 minutes).
  3. In the pan, mix in garlic, ginger and curry powder. Sauté until fragrant.
  4. In the pot, add pan ingredients, tomatoes, chili sauce, lentils, chick peas.
  5. Bring to a boil, reduce the heat back to a simmer until the lentils are tender, (about 10-15 minutes).
  6. Add cilantro before serving.
