New World Marinara
- 1 Tbsp virgin olive oil
- 3 cups onion, chopped
- 3/4 cup carrot, diced
- 1/2 cup celery, diced
- 1/4 cup garlic, minced
- 3 Tbsp fresh oregano, chopped
- 1/4 tsp crushed red pepper
- 2 Tbsp tomato paste
- 1/3 cup dry red wine
- 5 & 1/2 lb plum tomato, peeled and chopped
- 3/4 cup fresh basil
- 1 & 1/2 tsp salt
- 1/2 tsp black peppercorn, ground
- Add everything to a slow cooker and cook on low for 8 hours.
- Remove lid and use an immersion blender to smooth out the sauce to the desired consistency. Allow to cook several minutes longer without the lid to reduce any excess liquid in the sauce.
