Pumpkin Turkey Chili
- 1 Tbsp oil
- 1 onion, diced
- 1 bell pepper, diced
- 3 cloves garlic, chopped
- 1 tsp cumin
- 1 lb ground turkey
- 1 (15 oz) can white beans, rinsed and drained
- 1 (15 oz) can diced tomatoes
- 1 (15 oz) can pumpkin purée
- 2 cups vegetable stock
- 1 tsp oregano
- 1/4 tsp chipotle chile powder (optional)
- 1/2 tsp cinnamon
- 1/4 tsp ginger
- 1/4 tsp nutmeg
- 1/8 tsp cloves
- salt and pepper to taste
- Heat the oil in a pan over medium heat, add the onion, cook until tender. Add the bell pepper, garlic and cumin. Cook until tender.
- Add the turkey and cook until browned, about 15 minutes.
- Add the beans, tomatoes, pumpkin pureé, broth, and remaining spices. Bring to a boil. Reduce the heat and simmer for 25 minutes.
