Avocado Egg Salad
- 1 medium avocado
- 1 small lime, juiced
- 1 small jalapeño, finely diced
- 2 tablespoon cilantro, chopped
- 2 green onions, sliced
- 4 hard boiled eggs, peeled and diced
- 1 tablespoon mayonnaise (optional)
- 6 strips bacon, chopped (optional)
- pink peppercorn (optional)
- Mash avocado in a mixing bowl. Add lime juice, jalapeño, cilantro, onions, and mix.
- Fold in eggs. Add more lime juice or mayonnaise for a moister texture.
- Optionally, add bacon, peppercorn and serve on toast or a sandwich.
