Sweet Potato Burrito Mix
- 1 Tbsp vegetable oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 45 oz kidney beans, rinsed, drained, partially mashed
- 4 cups sweet potato, cooked and mashed
- 2 cups water
- 3 Tbsp chili powder
- 2 tsp cumin
- 4 tsp mustard
- 1/4 tsp chipotle chile powder, or to taste
- 3 Tbsp soy sauce
- Preheat oven to 350F/175C.
- Heat oil in a medium skillet. Sauté onion and garlic until tender.
- Stir in beans and sweet potato. Gradually stir in water, until mixture reaches desired consistency.
- Stir in the chili powder, cumin, mustard, chipotle pepper and soy sauce. Cook until fragrant. Remove from heat.
