Sesame Ginger Soba
- 1/3 cup tahini
- 1/3 cup water
- 2 Tbsp rice vinegar
- 1 Tbsp fresh ginger, minced
- 1 Tbsp miso paste
- 2 tsp soy sauce
- 1 tsp sesame oil
- 8 oz soba noodles, cooked and rinsed
- 1 large cucumber, julienned
- 4 green onions, chopped
- 1 handful fresh cilantro, chopped
- 2 Tbsp black sesame seeds, toasted
- In a bowl, whisk together tahini, water, vinegar, ginger, miso, soy sauce, and oil.
- Toss in noodles, cucumbers, green onions, cilantro, and sesame seeds. Serve room temperature or chilled.
