- 3 eggs
- 1 tsp sea salt
- 1 and 1/2 cups milk
- 2 cups all-purpose flour
- 1/4 cup water
- 8 oz feta, crumbled
- 2 Tbsp butter, cubed
- Preheat oven to 400F/205C. Grease a large baking dish. The dish should be large enough for the batter to spread thin.
- Put the dish in the oven to preheat without allowing the oil to smoke.
- In a large bowl whisk 2 of the eggs.
- While mixing well, add salt, milk then flour.
- Pour two-thirds of batter into hot dish.
- Mix water and remaining egg into remaining batter.
- Pour remaining batter into dish. Evenly pour feta on top.
- Drop butter evenly across the top
- Bake for approximately 40 minutes, rotating halfway through.
- Can be served hot or cold, as a side dish or drizzled with honey.
