Spiced Chai
- 3 cups water
- 3-4 inch cinnamon stick
- 1 tsp whole black peppercorn
- 1 tsp fresh ginger, grated
- 1/2 tsp cardamom seed, removed from pods
- 1/4 tsp nutmeg
- 1/4 tsp vanilla extract
- 1/8 tsp cloves
- 1/2 oz loose leaf black tea
- 1/4 cup brown sugar
- 1 cup whole milk
- Bring water to a simmer and add all the spices. Brew for 10 minutes.
- Add tea and continue brewing for another 3-5 minutes, making sure to not allow tea to over-brew and turn bitter.
- Add brown sugar and stir until dissolved. Remove from heat.
- Stir in milk then pour the liquid through a mesh strainer into a serving vessel.
