Orange Corn Cake

  1. Preheat oven to 375F/190C. In a mixing bowl, combine oil, eggs and cup of sugar. Add orange juice, zest, and water. Combine until smooth.
  2. Add flours, gum, baking powder, and salt. Mix until integrated.
  3. Transfer batter to a greased pan. Sprinkle remaining sugar over cake.
  4. Bake for 25 minutes, or until an inserted knife comes out clean. Allow to cool 15 minutes before removing from pan.
