Orange Corn Cake
- 1/2 cup olive oil
- 2 large eggs
- 1 cup sugar
- 1/2 cup orange juice (about 2 oranges), and zest
- 2 tsp orange blossom water
- 3/4 cup corn flour
- 1/2 cup corn starch
- 1/2 cup oat flour
- 3/4 tsp xanthan gum
- 2 tsp baking powder
- 1 tsp salt
- 1 Tbsp sugar
- Preheat oven to 375F/190C. In a mixing bowl, combine oil, eggs and cup of sugar. Add orange juice, zest, and water. Combine until smooth.
- Add flours, gum, baking powder, and salt. Mix until integrated.
- Transfer batter to a greased pan. Sprinkle remaining sugar over cake.
- Bake for 25 minutes, or until an inserted knife comes out clean. Allow to cool 15 minutes before removing from pan.
