Hazelnut Rose Cookies
- 1 cup + 2 Tbsp butter, softened
- 2 Tbsp rose water
- 1 cup brown sugar
- 3/4 cup sugar
- 1 tsp vanilla
- 2 eggs
- 2 cups brown rice flour
- 1/2 cup hazelnut flour
- 2 tsp xanthan gum
- 1 tsp baking soda
- 1/2 tsp salt
- ~3/4 cup hazelnuts, toasted and chopped
- Preheat oven to 375F/190C. In a mixing bowl, combine butter, rose water, sugar and vanilla. Add in eggs and mix until well integrated.
- In a separate mixing bowl, combine flours, gum, baking soda, and salt.
- While stirring the wet ingredients, pour in dry ingredients. Add in hazelnuts and mix until everything is integrated.
- On an ungreased baking sheet, dollop batter and flatten. Bake for ~10 minutes, or until cookies become firm but not browned.
- Allow cookies to cool and firm before removing from sheet.
