Chickpea Matcha Cake
- 15 oz chickpeas, rinsed and drained
- 3 eggs
- 1 Tbsp fresh matcha
- 1/2 cup sugar
- 1/2 tsp baking powder
- 1/2 tsp vanilla extract
- Preheat oven to 350F/175C. Mix chickpeas, eggs and matcha in a food processor until smooth. Add sugar, baking powder, and mix until integrated.
- Pour mixture into a greased cake pan and bake for 20 minutes, or until a knife inserted into the cake comes out clean.
